Hard-boiled eggs can be reliable meal-prep champions, but they do have a clock on them. Kept in the fridge, unpeeled, they’re at their best for about three to four days. Store them on an interior shelf, not in the door, where constant temperature swings slowly sabotage their freshness. Keeping them in their shells protects them from drying out and from absorbing stray fridge odors that can dull both flavor and texture.Once peeled, the countdown speeds up; plan to eat them within a day or two. At any stage, your senses are your best safety check: an off smell, slimy or chalky whites, or a strangely dry, crumbly yolk are all signs it’s time to let go. Don’t freeze them; the whites turn tough and rubbery. Treat those eggs kindly, use them while they’re still tender and bright, and they’ll reward you in every salad, snack plate, and deviled bite.
